Rather than waiting for a client to tell me what they'd like, I occasionally offer something I'm in the mood for on a day I have no bookings scheduled. Anyone on the mailing list for that activity gets the chance to book at a discounted rate. Offers are usually brief, short-notice meets at a significant discount for a very specific type of booking, but ultimately the offer can be anything I choose.
For example, one I used to run often was a watersports day. A lot of my clients enjoy watersports. Watersports, for context, refers to golden showers. Since it's something you can realistically only do once every half hour, it's expensive if that's your only interest. Instead of paying my standard half-hour rate of £100, I would offer clients the chance to come and go for around 10 minutes for £25. Arrive, strip, get in the shower, receive a golden shower, have an actual shower, head home.
